As the wine opens, richly concentrated, dark aromatics fill the nose with vine-ripened wild blackberry, blueberry and mocha-laced oak. The mouth reflects the opulence found on the nose. Intense ripe boysenberry, dark plum and black cherry are layered with luscious notes oak, vanilla and chocolate. Supple tannins stay in the background as they support the delicious flavors. As the wine lingers in the finish, hints of coconut appear, adding to this Cab’s elegance and appeal. We recommend decanting 30-60 minutes before enjoying.

“This pitch black colored Cabernet Sauvignon from Estate 1856 is very good. It opens with a black olive and black currant bouquet. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is a gentle blackberry and espresso blend with notes of mild minerality, black currant and oak. The finish is rather dry and its solid tannins build up and stick around for a while. I would decant this Cab and then serve it with a rib roast. The 2015 growing season brought much needed rain in December followed by a slightly dryer and warmer than normal spring. Early budbreak was followed by perfect weather with no rain that led to an extended bloom period and slightly smaller than normal clusters. The vineyard was watched closely as we entered the pre-harvest period, and the vines were monitored for stress during our normal late season heat events. Harvest went smoothly with wines settling into fermenters with great color being observed through the cold soak period. These early wines were very flavorful, leading to these great wines that were to come.
Our winemaking protocol demands separate small carefully temperature regulated fermentations for each varietal providing optimum treatment for each of our four Cabernet clones. These wines are carefully pressed direct to barrel and are aged separately until rigorous blending trials the Spring before Summer bottling. Each individual barrel is tasted for uniqueness and provides an essential blend diversity that typifies our wines as well as an exceptional 22 month ageing period. Our barrel reserve wines are selected from the most expressive two barrels from all of our Cabernet in barrels and this wine is 50% French clone 191 and 50% American clone 4!
