Rich dark fruit aromas laced with toasty vanilla oak lend an almost perfumey essence to the nose. The smooth entry flows into an opulent mouthfeel that glides gracefully across the palate and into a long finish. Perfectly balanced, this wine slowly reveals layers of flavors and complexity beneath the plush texture. Black raspberry, plum, and dark cherry mingle with hints of mocha, eucalyptus, milk chocolate, and a dash of spiciness that appears mid-palate. Polished tannins and seamlessly integrated oak camouflage the serious structure that will allow this wine to age for several more years.
Our 2011 Cabernet Sauvignon is composed of 97% Cabernet Sauvignon and 3% Petit Verdot. This wine was produced from another cooler-than-normal growing season that left these grapes on the vine for a very long time assuring great flavor development. Warm fermentation temperatures increased the concentration of aroma and flavor attributes extracted from the skins. Each varietal and each clone are separately fermented and aged in 100% French oak for 22 months until we can craft a wine that captures the true essence of our four Cabernet clones (two American and two French).
